More than 10 years of gastronomy, with you. From our beginnings as a gastropub in Teatinos, to launching into our dream of making for you the cuisine we learned and then dreamed of.
What Palodú means today is just a small part of everything we want to give back to you for having been there watching us grow.
Values
Sustainability, a fair price for all parts of the production chain, work-life balance, development opportunities, and, above all, a strong focus on people. From the kitchen to the dining room, the office, cleaning, communications, and the press. Everything at Palodú happens thanks to the people who make it happen.
We embrace the cuisine we love, without dogmatism or forced discourse that hijacks us. The pantry, free and honest, at the service of our creativity.

Cristina Cánovas
Chef
She cooks, prepares, and balances things. If she can, she'll come out to greet you and ask you questions, and you can tell her about your life, because she empathizes quickly.

Diego Aguilar
Chef
You'll find Diego in the kitchen, and he doesn't usually say much. But if you go over to say hello and discover what's behind the silence, you'll be in for a surprise.

Sergio Camacho
Kitchen
In addition to being a vital support in the kitchen for Cris and Diego, he's an absolute genius of dark humor. Best not to try putting on the earpiece if you see him talking.

Ana Cánovas
Sommelier
He says the "Sommelier" thing is too much for him. Don't take any notice of that, because if you follow his wine cellar recommendations, you'll have a better time.

Nacho Maraña

He commands more than he says or seems. But let him loose, and you'll have the perfect conductor for your time at Palodú.

She's fluent in hundreds of languages, in timing, in the room, and in smiles like no one else. Always, always on the move and attentive to whatever you need.
