
Cristina and Diego, it's all the same. From La Cónsula to places as different as Tickets, Mugaritz or El Lago, the place where they came together, and from which moment their destiny has gone hand in hand to project Palodú.
It has not been an easy road, and perhaps that is the driving force behind the change that has given rise to the new project, more personal and direct, where the two chefs look at haute cuisine head-on, and leave neighbourhood cuisine to make market cuisine, seasonal produce, reinterpreted traditional recipes, passions and projections.
In short, Palodú is (now yes), everything that Cristina and Diego thought, worked and dreamed of doing.
